Ordering coffee

I don't know if you have seen this video but it made me laugh, it is not the same anymore ordering a coffee as there are lots of ways of making coffee.
Chemex
Bodum
Syphon / Vacpot
Pour Over
Aeropress
Then the newest product Cafflano.
Then it depends on what sort of coffee you like? Latte, Three Quarter Latte, Flat white, Cappuccino, Espresso, Ristretto.

Cafflano Klassic - My New Travel Buddy




When i go on holiday i would normally take my Hario v60 or Aeropress,  my hand grinder and my scale but this time it was different as i had seen the Cafflano online and i really wanted one so i contacted them and found out i could get some in Seoul.  The company was amazing and organised some to get delivered to my accommodation as i was buying a few for friends and family The unit ways about 600 grams so it is light. The great thing is it is B.P.A free so you won't get all those nasty chemicals from plastic bottles.  I did not know what to expect from this unit as i read and watched some reviews on it. I used it everyday for 3 weeks and was happy with the results.  I will also do a video in coming weeks but i wanted to do this one now.


The thing i love about this is it is a all-in-one unit which there is no other like it.


The lid is the pourer and it has a removable lid in the top. Under the lid is the grinder which folds into itself and locks into the tumbler for easy grinding.


Under the grinder is the mesh filter.


The filter sits in the tumbler. I tried using it without filter paper but cleaning it took a while so i use a paper filter in it.  I put the filter in it then rinse it with hot water. After it is wet the paper folds down the side then the grinder twists and locks in place and holds the paper down.


I used 13 grams of coffee but there is lines on the side as measurements.


It takes a few minutes to grind but the burr grinder does a good job and i am happy with its consistency.


I am still working on the grams to seconds but it is roughly 30 grams of water to 30 seconds. If there is any water at the 2 minute mark i use the rest.  I use 250mls of water in total.



It takes about 3 minutes to do the full filter but i am extremely happy with the results.


The coffee was full bodied and had no bitterness.

It is such a great little unit and i will take it overseas from now on.

Top Paddock

Top Paddock

Our friend had been here and told us the wait outweighs the food and coffee. But other friends wanted to go anyway so why not?
They arrived at 9:30 to wait for a table for 10 am. We arrived at 10 am and there was a huge wait outside. Thank goodness they had gotten a table inside.


They have a great selection of coffees, we got two pour overs and they where good.


 I took a photo of the alcohol menu not the food menu lol



The food was good and so was the coffee, It was nice for a change but i would not go back especially for the wait times. There was over an hour wait when we left.

Pour Over Instructions

Pour Over Instructions

Normally i do pictures for my blog but i wanted to do a video for a change.



I recorded it by myself so it is a little shaky and editing takes ages. I spent about 4 hours editing and putting it together,
But here are my instruction.

1. Put filter into the pour over.
2. Rinse the filter with hot water.
3.Weigh out 13 grams of coffee.
4. Empty out cup with rinsed water.
5. Pour ground coffee into the pour over
6. Pour in 45 grams of hot water and let bloom for 30 seconds
7. Pour another 45 grams of hot water and let it sit for another 30 seconds.
8. Pour 80 grams of water for 30 seconds.
9. Pour the last 80 grams of water.
10.The coffee Should finish pouring in about 3 minutes in total.

We have been going to Monk Bodhi Dharma for a few years and have also been to the Friday dinners but we have never done the Degustation at the Cafe' or a Vegan degustation. It you have never been here it is a bit hard to find as it is hidden in an alleyway. 


It is a very small rustic sort of cafe and has an amazing selection of coffees and teas.




We had no idea to expect so it was going to be an interesting night. We ordered the Strawberry and rock melon Smoothie with Maple Syrup. Is was sweet and creamy and very filling.


The first thing we had was a palate cleanser, it was a tomato , cucumber and spiced water. I don't like tomato juice so i did not really like it but it was interesting to say the least.


The next dish we had was a  Tarator and it had Coconut yoghurt with cucumber and pineapple.
  

I don't eat much yoghurt but it was a nice mix, it was sweet and a bit tart with some crunchiness.
The next dish was the Quinoa Cake, it had quinoa , dill butter and tomato.


It was very crunchy and buttery, the flavours were amazing and completely different.
We then had green olives with artichokes with a thyme mayonnaise.

  
The mayonnaise helped change the flavour of the olives so it was not as salty.
The next dish was my favourite Watermelon and Feta. It had watermelon, sharp feta and freeze dried raspberries.


I would have never thought it would have worked as well as it did. It was sweet and crunchy yet smooth and salty, it was AMAZING.
The next dish was chilli , macadamia and mango.


It was not a hot chilli but had a little bit of spice, the macadamia paste gave it structure and the mango gave it a fresh taste.
Most of the courses had bit smallish so the next course was quite big. We got a Persian Stew and it had  vegetables, persian lime, barberries, rice and salad.


I mixed the rice in the stew and it was cooked to perfection. The potatoes fell apart as you ate them. The rice was soft and fluffy with a little bit of crunchiness. It was heavy from the potatoes.
The next dish was also a favourite, the sweet potato stack. 


So it had sweet potato on the top and the bottom like a sandwich with a almond chevre. Almond chavre is cultured almond paste and used to replace goats cheese. The flavours worked so well together and i could go vegan if i had food like this. I was starting to get full and that does not happen very easy with degustations.
The next dish was melon caviar.


I just ate it in one bite and it was sweet from the melon and chewy. The flower gave it a slight bitter taste afterwards.

The first dessert was the Space Library 


The reason they called it space library was because they love the movie Interstellar and it refers to a scene? Anyway it was layered sponge with fruit , berries, vanilla. It was sweet and i would never had expected it to vegan.
The last dish we had was a deconstructed snickers bar.


It had chocolate, peanuts and caramel. It was sickly sweet, crunchy and if you were still hungry this would fill you up. The menu said there was a Mignardises but we did not get one, maybe they ran out?
It did not matter as we ate so much and was amazing value for money.
We loved it all and we will do it again.


They are doing another one on Valentines day and if there is space DO IT..seriously.

Syphon / Siphon Coffee

I came across this website for Melbourne's Best Cafe's, so we will have a few good suggestions to go to. Any way  my friend lent me his Coffee Syphon / Siphon for me to play around with. It's not very forgiving, if you leave it too long it gets burnt but not long enough and you don't get the sweet fruity flavours. I still don't get it 100% but i just love the science behind it.

First i do my usual 13 grams of coffee


I used 200 grams of water, last time i used 220 and i had lighter flavour. I really need to do more research but using the flame is not as consistent at the  Halogen light. But it is free so so I am happy with it.
Put it on the heat


As it heats up it forces the water up the spout into the top section


While its heating grind your coffee.


 I had to use a small container to pour the grounds in.

Pour the coffee in the water and stir 5 times around (so the internet said)


 I brewed it for 2 minutes, some people said 1.5 min and others 3 min , i guess its personal preference really.


After the time is up take the flame away and the coffee filters down into the bottom section

The Difference between the 2 coffee Syphons, one is a Hario, the other Bellina Syphon. The heat lamp is more consistent and looks awesome. The coffee was awesome.

Its still trial and error but i enjoy playing around with it.
